I was really unsure what to do for my practical exam considering we had to use both white and dark meat with two different cooking techniques, but then my mind went straight to consomme! I really wanted to have multiple “layers” to this dish and for some reason I thought it would be super cool to have a something floating on the consomme which led me to the idea of a pond. roasted chicken thigh with roasted garlic, and shallot mixed into a
