As a certified pear obsessive, there’s nothing better than cradling them in an intense pear caramel and wrapping it all up in flaky buttery pastry. I’ve served mine with creme anglaise, but a scoop of ice cream would be heavenly, too! ✨ also I 🩷 starch gelatinisation.
